Ingredients
1 cup unsalted butter, softened
3/4 cup brown sugar, packed
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup pecans, chopped
1/2 cup white chocolate chips (optional, but recommended)
Instructions
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
In a mixing bowl, cream the softened butter with brown sugar and granulated sugar until light and fluffy.
Add in the egg and vanilla extract, mixing until well combined.
In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients and mix until just combined.
Stir in the chopped pecans (and white chocolate chips if using).
Roll tablespoon-sized dough portions into balls and place them on the prepared baking sheet, about 2 inches apart.
Bake for 10-12 minutes or until golden at the edges, but still soft in the center.
Cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely
Notes
You can substitute pecans with other nuts like walnuts or almonds if desired.
For a chewier texture, under-bake the cookies slightly and let them set on the baking sheet before transferring.
These cookies store well in an airtight container for up to a week.
