Description

This Cherry Amaretto Tiramisu is a boozy, fruity spin on the classic Italian dessert. Sweet cherries, fluffy mascarpone cream, and amaretto-soaked ladyfingers are layered into a no-bake treat that’s both indulgent and elegant. Perfect for summer nights, holidays, or whenever you’re craving a little romance in dessert form.


Ingredients

1 ½ cups pitted dark sweet cherries (fresh or thawed frozen)

¼ cup granulated sugar

½ cup amaretto liqueur

1 cup strong brewed coffee or espresso, cooled

1 ½ cups heavy cream

1 cup mascarpone cheese, room temperature

½ cup powdered sugar

1 tsp vanilla extract

1 package (approx. 7 oz) ladyfinger biscuits (savoiardi)

Cocoa powder, for dusting

Dark chocolate shavings (optional)

Additional cherries, for garnish


Instructions

Prepare the cherries: In a saucepan over medium heat, combine the cherries, granulated sugar, and 2 tbsp of amaretto. Simmer for 5–7 minutes until cherries soften and the syrup thickens slightly. Set aside to cool.

Mix soaking liquid: In a shallow bowl, combine the brewed coffee with the remaining amaretto. Set aside.

Make mascarpone filling: In a mixing bowl, beat the heavy cream until stiff peaks form. In another bowl, whisk mascarpone with powdered sugar and vanilla until smooth. Gently fold the whipped cream into the mascarpone mixture until combined.

Assemble: Quickly dip each ladyfinger into the coffee-amaretto mixture (don’t soak too long!) and layer them in the bottom of a serving dish or trifle bowl. Spread half the mascarpone mixture on top, followed by half the cherry mixture. Repeat layers.

Chill: Cover and refrigerate for at least 6 hours or overnight for best flavor and texture.

Serve: Dust with cocoa powder, top with extra cherries and dark chocolate shavings. Slice and serve chilled.

Notes

You can use canned cherry pie filling in a pinch, but fresh or frozen cherries taste best.

Swap amaretto for almond extract (1 tsp) + extra coffee if you want it non-alcoholic.

Best made the night before to let the flavors meld perfectly.
