Ingredients
2 ripe avocados, diced
1 cup corn kernels (fresh or grilled)
1/2 cup cherry tomatoes, halved
1/4 red onion, thinly sliced
1/4 cup cilantro, chopped
Juice of 1 lime
Salt and pepper to taste
Instructions
In a large bowl, combine diced avocados, corn kernels, halved cherry tomatoes, sliced red onion, and chopped cilantro.
Squeeze the juice of 1 lime over the ingredients.
Season with salt and pepper to taste.
Gently toss the salad to combine, being careful not to mash the avocados.
Serve immediately for the freshest flavor, or chill for 10-15 minutes before serving.
Notes
If you prefer a smoky flavor, you can grill the corn before adding it to the salad.
For an extra crunch, add some diced cucumber or radishes to the mix.
