Ingredients

4 ears of fresh corn (or 2 cups of frozen corn, thawed)

1 cup cherry tomatoes, halved

1/2 red onion, finely diced

1/2 cucumber, diced

1/4 cup fresh cilantro, chopped

1/4 cup feta cheese, crumbled (optional)

1 tablespoon olive oil

1 tablespoon fresh lime juice

Salt and pepper to taste


Instructions

Prepare the Corn: Boil the ears of corn in salted water for 4-6 minutes if using fresh corn. Let it cool and slice off the kernels. If using frozen corn, heat it as per package instructions and allow it to cool.

 

Combine the Veggies: In a large bowl, mix the corn kernels, cherry tomatoes, red onion, cucumber, and cilantro. Toss gently.

 

Dress the Salad: Drizzle with olive oil and lime juice, then season with salt and pepper. Toss again to coat evenly.

 

Add Feta: Sprinkle crumbled feta cheese if desired and toss lightly.

 

Chill and Serve: Serve immediately or chill for 30 minutes to let the flavors meld.

Notes

You can substitute avocado or black beans for added texture.

For a spicy touch, try adding diced jalapeño or chili flakes.

This salad makes a great side dish for grilled meats or as a light meal on its own.
