Ingredients
4 boneless, skinless chicken breasts
1 lemon, juiced and zested
2 tbsp olive oil
1 tsp garlic powder
1 tsp dried rosemary
1 tsp dried thyme
Salt and pepper to taste
1 cup low-sodium chicken broth
2 cups mixed vegetables (zucchini, bell peppers, cherry tomatoes)
Instructions
Place chicken breasts in the bottom of the crockpot.
In a small bowl, combine lemon juice, lemon zest, olive oil, garlic powder, rosemary, thyme, salt, and pepper.
Pour the lemon herb mixture over the chicken.
Add the mixed vegetables (zucchini, bell peppers, cherry tomatoes) on top of the chicken.
Pour the chicken broth into the crockpot.
Cover and cook on low for 6-8 hours, or high for 3-4 hours.
Once done, check the chicken for doneness (it should reach 165°F).
Serve hot with rice, quinoa, or a fresh salad.
Notes
You can swap the chicken breasts for thighs if you prefer dark meat.
