Description
This sweet zucchini relish is a flavorful, tangy-sweet condiment that’s ideal for sandwiches, burgers, or as a tangy topping. A perfect way to use up summer zucchini and preserve the taste all year round through canning.
Ingredients
10 cups shredded zucchini
4 cups chopped onion
2 cups chopped red bell pepper
2 cups chopped green bell pepper
5 tablespoons salt
2 1/2 cups white vinegar
2 1/2 cups sugar
1 tablespoon celery seed
1 tablespoon mustard seed
1/2 teaspoon turmeric
Instructions
1. Place shredded zucchini, onion, and bell peppers in a large bowl. Sprinkle with salt, mix well, and let sit overnight in the refrigerator.
2. Drain and rinse the vegetable mixture thoroughly in a colander.
3. In a large pot, combine vinegar, sugar, celery seed, mustard seed, and turmeric. Bring to a boil.
4. Add drained vegetables to the pot and simmer for 30 minutes, stirring occasionally.
5. Sterilize your canning jars and lids according to safe canning guidelines.
6. Fill hot jars with relish, leaving 1/2-inch headspace. Wipe rims, add lids, and tighten rings.
7. Process in a boiling water bath for 10 minutes.
8. Let cool completely and store in a cool, dark place.
Notes
This relish is shelf-stable if properly canned and can last up to a year.
Great for BBQs, charcuterie boards, or gifting during the holidays.
For a spicier twist, add minced jalapeño or chili flakes.
